…Bubbles and Squeak…
This recipe from A Virtual Vegan was awesome!! I love oil free recipes. These were like a British potato pancake. Potatoes, onion, shaved Brussels and cabbage baked until crispy. Fantastic! The kids loved them too.
..Bangers and Onion Gravy..
I also made The Gentle Chef Bangers and Onion Gravy. I was only going to make the Bubbles and Squeak but I just bought the Seitan and Beyond book and happened to have all the ingredients for both the banger’s and the gravy, so hell with it! Banger’s and Gravy it is! They came out fantastic, as with everything I’ve made by Chef Skye. He is a magical man.
..Shepard’s Pie..
Wendy made this Shepard’s Pie with a little help from The Minimalist Baker. Have made her lentil pie before and it’s always a winner.
…berry crumble…
Julie set out to make a blueberry crumble, but over thickened the berries. She went the store and found some perfect mixed berries so used those instead. This came out wonderfully, as usual. We added some of the new Coconut Redi Wip to the top. Yum.
