
Vegan Stew Chick'n

Ingredients
- 1 recipe Belizean Seitan
- 1-2 tbsp coconut oil
- 1-2 tsp brown sugar
- 1 white onion chop
- 2 green bell peppers chop
- 5 Garlic Cloves chop
Sauce
- 2 tbsp recado/achiote paste
- 1 tbsp white vinegar
- 3 tbsp Soy Sauce
- 3 tbsp worcestershire
- 2 tbsp cumin powder
- 1 tsp thyme
- 1 tsp oregeno
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

In a large pot, mix coconut oil with brown sugar, then fry seitan for about 2 minutes.

Add onion, bell pepper, and garlic, and saute for about 3 minutes until slightly translucent.

Add the liquid mixture with enough water to almost cover. Bring to boil and simmer for about 40 minutes.
