May the Fourth - Star Wars Day 2018
We had such a great time last year celebrating Lennon’s half birthday which falls on May 4th. Still had all those great signs from last year, so we did it again. It’s now May the 16th, so I’ve been way behind! But here I am, down to document the happenings. I think my major meh about doing all this is the photo editing. Getting them from my phone’s not so amazing camera, then filtered to change the brightness and contrast and whathaveyou, then uploading the edited photos to this thing. I really regret using wordpress. I wonder if I can move all this over to Wix. What a pain in the ass. Anyway, back to the party….

I made these with Trader Joe’s new Falafel Mix. I really like it! They’re a little spicy and a tad too salty, but they’re fast and a great texture. I will most definitely be buying this mix again.

Wendy made this at one of her parties last year and I loved it so much I requested it once again. Bow tie pasta with Benevolent Bacon make this awesome BLT Pasta Salad.
R2-Tofu Nuggets

My signature baked crispy nuggets. No one doesn’t love these. I use super dense tofu and bake them in my toaster oven. Today I made a few dipping sauces, one being a mix of Buffalo and Mayo that I am totally making again! You can get this easy recipe here.

You can’t throw a kids party without some carrots in a blanket! Pigs in a blanket were my favorite food when I was a child, and I am just as in love with these little rabbits.

Okay, this is all I got. The food was awesome, the company was awesome, Lennon had a super amazing 4.5 birthday that he may just remember forever. We’ll see what we come up with for his 5.5 birthday, May 2019. Jesus, 2019. Where has the time gone? Til next week (also known as tomorrow if you wait two week to post your blog), were we are eating from Spain!
