Savory Vegetarian Broth

Ingredients
  • ¼ oz dried chantarelle mushrooms
  • 6 enoki mushrooms
  • 5 cremini mushrooms sliced
  • 1 small-med carrot sliced
  • ¼ onion unpeeled
  • 2 inch piece kombu dried kelp
  • 2 garlic cloves peeled and smashed
  • 1 tbsp vegetable oil
  • 3 or 4 cardamom pods
  • ½ tsp peppercorns
  • tsp fennel seeds
  • Pinch dried thyme
  • Pinch celery salt
  • 3 sprngs parsley
  • 1 ½ bay leaves
  • 4 cups water
Instructions
  1. Toss ingredients in a pot, cover with water and bring to a boil. Lower to a simmer, partially cover and cook about 40 minutes. Strain out veggies, herbs, and spices. Use immediately, store in fridge 3 days, or freeze.
