Savory Vegetarian Broth

Ingredients
- ¼ oz dried chantarelle mushrooms
- 6 enoki mushrooms
- 5 cremini mushrooms sliced
- 1 small-med carrot sliced
- ¼ onion unpeeled
- 2 inch piece kombu dried kelp
- 2 garlic cloves peeled and smashed
- 1 tbsp vegetable oil
- 3 or 4 cardamom pods
- ½ tsp peppercorns
- ⅛ tsp fennel seeds
- Pinch dried thyme
- Pinch celery salt
- 3 sprngs parsley
- 1 ½ bay leaves
- 4 cups water
Instructions

Toss ingredients in a pot, cover with water and bring to a boil. Lower to a simmer, partially cover and cook about 40 minutes. Strain out veggies, herbs, and spices. Use immediately, store in fridge 3 days, or freeze.
