Jeanie's Watermelon Sorbet
- 3/4 of a small basketball sized watermelon
- 1 can of full fat coconut milk
- 1 large lemon ,juiced
- a good squeeze of agave.
Put it all in a vitamix and blend well.
Pour it in a baking dish and freeze it over night (or just until frozen).
Cut it up into chunks and (in batches) put it back into the vitamix and blend until it's smoothly folding.
Refreeze it for another 3+ hours.
Recipe NotesThe first round of blending makes it like a icee, the second round is what makes it have a smooth sorbet consistency.
