Vegan Taylor Ham Egg and Cheese/Egg McMuffin

Being from New Jersey I inherently have a love for a pork roll, egg and cheese sandwich.  Using a few products found at whole foods I am able to satisfy my craving.  It's hard to eat just one!!

  • 4 slices extra dense, high protien tofu 1/4" slices
  • 4 english muffins (see note)
  • 4-8 slices yves vegan Canadian bacon (found by eggs at whole foods)
  • 4-8 slices vegan cheese
  • 1/4 cup water
  • 3 tbsp nutritional yeast
  • 1/4 tsp black salt (or slightly less regular salt if you don't have this on hand)
  • 1/8 tsp turmeric heaping
  • 1/8 tsp dry mustard heaping (optional)
  • 1/8 tsp paprika (optional)
  • 1/8 tsp curry powder (optional)
  1. Toast Muffins in the oven with cheese slices on top.

  2. Make slurry and pour over tofu in a pan over medium high heat.  Cook until the mixture crusts up, adding water as needed and turning half way.  Another option is to cut the slices the day before and pour the slurry over.  Cook in a pan or just simply nuke them in the microwave until warm. 

  3. Heat the ham slices in the microwave or in a pan if your a non microwaving freak o nature.  

  4. Make into a sammy and enjoy.

Recipe Notes

Thomas's English muffins are NOT VEGAN. I buy mine cheap at Trader Joes or at Whole Foods. Some grocers have vegan muffins in the freezer, but I found them to be $$$$$. I buy a few packages and keep them in my freezer. Also this sandwich is frequently served on a bagel or a hard roll.


The super dense tofu isn't required, but so much better if you can get your hands on it. It makes perfect slices with no freezing, pressing or falling aparts.  Both Trader Joe's and Whole Foods carry them, and they usually noted with having extra protein. Super Duper Firm!


Black salt is a sulfuric salt from India also called Himalayan black salt. It's actually pink, but is NOT Himalayan Pink Salt.  Super confusing right? Buy it cheap at any Indian grocery or here on amazon....



Watch out when getting cheese at your local produce for the words "lactose free" this usually denotes that the product is NOT VEGAN, and still have casein which comes from cows.  I used Follow Your Heart American for this amazing sandwich.  Chao is also a great option.  Or make your own! 🙂
