  • 6 tortillas
  • 6 tbsp hummus
  • 1 cucumber half, quarter, seed, sliced thin
  • 1 large carrot sliced thin
  • 1 red bell sliced thin
  • 1 jalapeño sliced thin
  • sriracha
  • cilantro
Peanut Sauce
  • 2 tbsp natural peanut butter
  • 2 tbsp HOT water
  • 1 1/2 tbsp lime juice
  • 2 tbsp sweet red chili sauce
  • 1 tbsp low-sodium soy sauce
  • 2 tsp rice vinegar
  • garlic powder
  • ground ginger

  • 14 oz coleslaw mix
Peanut Slaw
  1. Whisk peanut butter with hot water until creamy, add remaining ingredients through coleslaw.
  2. I like my coleslaw fine, so I pulse it in my food processor, then toss with peanut sauce. Set aside.
  1. Spread a tbsp of hummus onto each of your warmed tortillas.
  2. Top with sliced vegetables, peanut slaw, and whole cilantro. Drizzle with sriracha.
  3. Use any extra peanut sauce as a dip!
